Chocolate Energy Balls

This is a versatile recipe where you can add and change ingredients easily. Variations include; using different nuts, raisins, cacao nibs, shredded coconut, or super food powders like Maca. Makes a large batch that can be kept on hand in the fridge for quick, convenient energy.

 68 Dates (depending on size)
 ½ cup Coconut oil
 ¾ cup Almond butter
 ½ cup Pecans or other nuts (chopped)
 ¼ cup Sunflower seeds (ground)
 ¼ cup Pumpkin seeds (ground)
 ¼ cup Flax seeds (ground)
 ½ cup Dried cranberries (chopped)
 2 tbsp Cocoa
 ¾ cup Enjoy Life Cinnamon Granola (remove raisins)
 ½ tsp Sea salt (finely ground)

Place whole dates in a large bowl and cover with boiling water. Set aside to soften (10 minutes), then discard water and remove pits. Mash dates into a paste using a fork.

Let date paste stand until cool before mixing with coconut oil.

Add coconut oil to date paste and mix until smooth. Add almond butter and stir until combined. Add cocoa and stir until combined. [This is when you would add maca or protein powder].

Using a nut grinder, grind nuts and seeds into small pieces.

Add nuts, seeds, cranberries and granola to the almond butter mixture and stir gently to combine.

Scoop mixture with a teaspoon and form into bite-sized balls using your hands. Place balls on a plate or baking sheet that will fit in the fridge. Once balls are formed, refrigerate until solid, then store in a glass container in the fridge fro up to 6 weeks.
