Green Pea Guacamole

A twist on the classic guacamole; green peas make it bright in colour and reduce the fat content, so you can enjoy more.

 1 Small red onion
 2 Cloves of raw garlic
 2 Ripe avocados
 1 cup Green peas (thawed)
 1 Tomato (medium sized)
 Juice from 1 lemon
 To taste - Salt and pepper

In a food processer pulse the clove of garlic with the purple onion until chopped.

Cut tomato in half and pulse in food processor until diced.

Cut avocados in half (lengthwise). Remove the flesh and add to food processor.

Add green peas, salt and pepper and lemon juice and blend together.

Once combined, store in a glass container in the fridge for up to one week.

Serve with cucumber slices, or organic corn tortilla chips.
