Healthy Egg Salad – 2 Ways

Try these healthy twists on traditional egg salad. Pair with whole grain crackers or sprouted grain bread.

Option 1
 1 ripe Avocado (peeled and cut into cubes)
 3 Hard boiled eggs (allow to cool)
 1 Pickle
 1 stalk Celery (finely chopped)
 1 tsp Dill
 Salt and pepper

 2 Hard boiled eggs (allow to cool)
 3 tbsp Greek yogurt (plain)
 1 stalk Celery (finely chopped)
 1 tsp Dill
 Salt and pepper

Mash ripe avocado in a bowl until creamy. Add dill, salt and pepper.

Chop hard-boiled egg, pickle, and celery. Add to the avocado mixture and mix until desired consistency is reached.

Enjoy on salad, with crackers or in a sandwich.

Mix dill, salt and pepper in a bowl with Greek yogurt.

Chop hard-boiled egg and celery. Add to the yogurt mixture and mix until desired consistency is reached.
