Quinoa Lentil Salad

Quick, easy, and delicious this quinoa salad boats a lot of flavour and protein in one vegetarian dish. Use it as a side dish, main meal, or a topper for a traditional lettuce salad.

Ingredients
 2 cups Quinoa (cooked and cooled)
 1 cup Brown lentils(cooked)
 2 cups Cherry tomatoes (diced)
 12 Kalamata olives (sliced)
 1 medium Zucchini (grated)
 1 large Carrot(grated)
 1 small Red onion(diced)
 ¼ cup chopped fresh parsley
 1 tbsp Basil (fresh or dried)
 1 tbsp Mint (fresh or dried)
 Juice from one lemon
 ¼ cup Olive Oil
 ½ tsp Sea Salt and Black pepper

Cook quinoa and brown lentils according to package instructions and let cool.

Chop tomatoes, olives, onion and parsley and add to a large mixing bowl.

Grate carrot and zucchini and add to the other ingredients.

Stir in quinoa, lentils and other spices and mix until evenly combined.

Season with salt, pepper, olive oil and lemon juice and mix together.

Store in a large air - tight glass container in the fridge for up to 4 days.
