Roasted Brussels Sprouts with Walnuts

If you need to be convinced that Brussels Sprouts are tasty, this recipe will do it. Roasting brings out their sweetness which pairs well with the added crunch from the walnuts.

 20 Brussels Sprouts (or more, depending on how much you’d like to make)
 ½ tsp Sea salt
 ¼ tsp Black pepper
 1 tbsp Coconut oil (melted)
 ½ cup Walnuts (chopped)

Preheat an oven to 350 degrees F (175 degrees C).

Wash Brussels sprouts and cut in half lengthwise. Remove outer leaves if they’re discolored.

In a mixing bowl, coat the halved Brussels sprouts with coconut oil, salt and pepper.

Place in a baking dish and bake for 20 minutes.

Turn Brussels sprouts using a spatula. Test with a fork to judge how tender they are. When they’re finished they should pierce easily with a fork.

When Brussels sprouts are almost cooked through, add the walnuts to the baking dish and roast them together until the Brussels sprouts are done.

Serve alongside your favourite protein, or enjoy as a snack at any time of day.
