Place can of coconut milk upside down in the fridge and let cool overnight (or for 3 hours)
Open can from bottom (now the top) and pour out the liquid coconut milk. You can save this coconut milk to use in smoothies, if desired.
Spoon out the thick coconut cream at the bottom of the can, and place in a stainless steel mixing bowl. Add 1 tsp. vanilla and whip until smooth (2 minutes).
Arrange individual servings with berries, a sprinkle of cinnamon, flax seeds and top with coconut cream.
Note: You can add 1 tbsp. of cocoa powder and 1 tbsp. of maple syrup to make a chocolate cream.
