Bison Chili

A delicious alternative to ground beef, bison is lean and flavourful. Add as many vegetables as you like to this recipe. Serve with whole grain bread for dipping, or on its own for a warming winter meal.

 1 tbsp Coconut oil (or other high-heat oil)
 1 cup Chopped onion
 1 Bell pepper, diced
 1 can Black beans (or 1 cup dried and re-hydrated)
 1 cup Corn (organic)
 ½ cup Celery (chopped)
 48 Mushrooms (sliced)
 2 Cloves Garlic (minced)
 6 Plum tomatoes (diced)
 1 Jar Tomato sauce/ stewed tomatoes
 1 can Tomato paste
 3 tbsp Chili powder
 1 Bay leaf
 1 tsp Oregano
 1 tsp Basil
 ½ tsp Cumin
 1 lb Ground bison

Heat cooking oil in a large pot. Add onion and garlic and sauté until translucent.

Add bison and spices and sauté until the meat begins to brown.

Add pepper, celery, corn, mushrooms and beans, stir together.

Once the vegetables begin to cook, add the diced tomatoes, paste and sauce to the pot. (Add the bay leaf in at this time).

Stir ingredients together. Bring to a boil, then reduce heat and let simmer for 30-45 minutes.

Remove bay leaf and serve.
