Spicy Chickpea Snack

These oven-roasted chickpeas are a perfect grab-and-go snack. Keep them in your desk drawer at work, or pack them to take on a hike or bike ride. They’re packed with protein and full of flavour!

 3 cups Chickpeas (cooked ahead of time and thoroughly drained)
 1 tbsp Coconut oil
 1 tsp Cumin
 1 tsp Chili powder
 2 tbsp Lemon rind
 ½ tsp Sea salt

Heat oven to 400F, making sure rack is in the middle of the oven.

Place chickpeas in a large mixing bowl and coat with spice mixture. Note: this works best if the chickpeas are slightly damp, so add the lemon rind first.

Be sure to use cooking oil that can survive high cooking temperatures (like coconut oil).

Coat a baking sheet with coconut oil. Spread the chickpeas in an even layer.

Bake until crisp, stirring occasionally (about 70-90 minutes).
