1 tsp Minced shallots
½ tsp Minced fresh herbs (such as rosemary)
Juice of one lemon (may sub 3 tbsp. of vinegar)
1 tsp Dijon mustard
To taste - Salt and pepper
½ cup Extra virgin olive oil

Whisk herbs and shallots together with lemon juice, mustard, and salt and pepper.

Drizzle olive oil into the above mixture, careful to whisk constantly to emulsify.

Adjust seasonings and toss with salad.
