Coconut-Lime Chicken & Snow Peas

This recipe makes a great stir-fry when served with rice, or a delicious salad when served on top of greens. The dressing is versatile and can be used to marinate the chicken and dress a salad.

 1 cup Coconut milk
 ¼ cup Fresh-squeezed lime juice
 1 tbsp Honey
 ½ tsp Salt
 2 Chicken breast (boneless), cut into strips
 1 cup Sliced snow peas
 1 small Onion (chopped)
 3 tbsp Fresh cilantro (chopped)
 2 tsp Red onion (minced)
 Brown rice or other grain to serve - OR - Chopped lettuce and shredded cabbage to serve

Whisk coconut milk, lime juice, honey and salt together in a bowl. Pour half of this mixture over top of chicken strips in a bowl and set aside.

Chop onion and snow peas.

Add onion, chicken and sauce to a wok pan and sauté on medium heat until the chicken is nearly cooked through.

Add snow peas and cilantro and sauté until the snow peas are tender but still crispy.

Serve on top of lettuce and shredded cabbage, or over cooked brown rice.
